Ingredients

  • All-purpose flour
  • Sugar
  • Eggs
  • Apricot jam
  • Milk
  • White vinegar
  • Baking soda
  • Butter
  • Cream (for sauce)

Method

  1. Beat egg and sugar until pale, then whisk in apricot jam.

  2. Sift in flour and alternate with milk to form a soft batter.

  3. Stir baking soda into vinegar and fold it in as it fizzes.

  4. Bake at 180 °C for 40 minutes until risen and golden.

  5. Simmer butter, cream, and sugar into a warm sauce.

  6. Pour the sauce over the hot pudding and let it soak in before serving.
