Method
Beat egg and sugar until pale, then whisk in apricot jam.
Sift in flour and alternate with milk to form a soft batter.
Stir baking soda into vinegar and fold it in as it fizzes.
Bake at 180 °C for 40 minutes until risen and golden.
Simmer butter, cream, and sugar into a warm sauce.
Pour the sauce over the hot pudding and let it soak in before serving.
