Diffusion & Extraction
Letting a liquid migrate into or out of a porous solid.
How it works in the lab
Extraction chemists steep plant material in solvent for hours or apply Soxhlet extraction, which repeatedly washes the solid with fresh condensed solvent, because dissolved compounds only migrate out as fast as diffusion carries them through the plant tissue. Grinding the sample first shortens the diffusion path and dramatically speeds extraction, a direct application of diffusion physics. Temperature and solvent choice set how fast and how selectively the target compounds move.

How it shows up in baking
A baker sprinkles sugar on sliced strawberries and waits as osmosis draws juice out into a syrup, or brines and cures meats where salt diffuses inward while moisture moves outward. Soaking dried fruit in rum or tea is diffusion through a porous solid. The shared principle is that concentration differences drive molecules through tissue, and time, temperature, and surface area set the pace.
