Ingredients

  • All-purpose flour
  • Instant yeast
  • Sugar
  • Warm water
  • Nutmeg
  • Salt
  • Butter (optional)
  • Frying oil

Method

  1. Mix flour, yeast, sugar, nutmeg, and warm water into a thick batter.

  2. Cover and let rise for a controlled 1-2 hours — longer for a lighter crumb.

  3. The batter should be bubbly and stretchy when stirred down.

  4. Heat oil to 180 °C.

  5. Scoop portions into the oil with a wet hand or scoop.

  6. Fry, turning constantly, until uniformly deep golden, then drain.
