- Frying oil
Method
Mix flour, yeast, sugar, nutmeg, and warm water into a thick batter.
Cover and let rise for a controlled 1-2 hours — longer for a lighter crumb.
The batter should be bubbly and stretchy when stirred down.
Heat oil to 180 °C.
Scoop portions into the oil with a wet hand or scoop.
Fry, turning constantly, until uniformly deep golden, then drain.
