Method

  1. Verify the oven temperature with an oven thermometer and preheat to 200 °C.

  2. Whisk cornmeal, flour, sugar, baking powder, and salt.

  3. Whisk buttermilk, eggs, and melted butter in a separate bowl.

  4. Combine wet and dry ingredients until just mixed.

  5. Pour into a hot, buttered skillet or pan.

  6. Bake 20-25 minutes until a skewer comes out clean.
