Instrument Calibration
Verifying a thermometer, balance, or oven against a known standard before use.
How it works in the lab
Before any measurement counts, labs verify their instruments against known standards: pH meters are calibrated daily with buffer solutions of pH 4, 7, and 10, balances are checked with certified reference masses, and thermometers are tested at 0 °C in an ice bath. This is done because instruments drift over time, and a reading from an uncalibrated instrument is not just imprecise, it is wrong in a way you cannot detect from the number itself. Calibration records also let scientists trace a bad result back to a faulty instrument.

How it shows up in baking
Bakers test their oven with a standalone thermometer because the dial often reads 25 degrees off, and they clip a probe thermometer into the bread to confirm it is truly done.
