Thermometry / Calorimetry
Tracking temperature to identify a reaction's endpoint or measure heat flow.
How it works in the lab
In a calorimetry experiment, a student measures the temperature change of water surrounding a reaction and multiplies by the water mass and specific heat to calculate the heat released or absorbed, which gives the enthalpy change. Chemists also watch a thermometer during distillation, because the plateau temperature tells them which pure compound is currently boiling over. Temperature is used both as a measuring tool for energy and as a diagnostic signal for what is happening inside the vessel.

How it shows up in baking
A baker reads sugar temperature on a candy thermometer to know the exact stage, since 115 °C gives soft ball fudge and 150 °C gives hard crack brittle. A probe in the center of a roast bread loaf converts internal temperature into doneness. Both settings turn temperature readings into predictions about structure and endpoint.
