Water-Bath (Bain-Marie) Heating
Indirect heating via a surrounding liquid for gentle, even temperature control.
How it works in the lab
Labs hold enzyme reactions at exactly 37 °C in a thermostatted water bath, because water contacts the tube from all sides and its temperature cannot overshoot much above its set point. Direct hot plates create scorching hot spots that destroy enzymes before the bulk of the sample even warms up. A water bath also lets you heat flammable solvents safely, since the liquid never touches a flame or exposed heating element.
