Alkaline Surface Treatment
Dipping a substrate in a basic solution to alter its surface chemistry.
How it works in the lab
Materials chemists treat surfaces with sodium hydroxide solutions to strip native oxide layers, etch glass, or activate a polymer surface so coatings and glues bond to it. The base hydrolyzes the outer molecular layer, changing how the surface interacts with water and with the next layer applied. Pretreatment like this is done because a surface covered in contamination or old oxide is the most common reason a bond or coating fails later.

How it shows up in baking
Dipping pretzels in a food-grade alkaline bath before baking breaks down the surface starch and proteins so the crust browns deep brown with the distinctive pretzel flavor and shine. Bagels get a brief boil, often with a little baking soda, for a similar surface change.
