Controlled Supersaturation
Holding a solution in a supersaturated state without triggering crystallization.
How it works in the lab
Crystallization engineers deliberately create supersaturated solutions by dissolving a compound hot and cooling it slowly, holding the solution in a metastable state where crystals would love to form but no nucleus has appeared yet. The entire art of controlled crystallization lives in this window: add a seed crystal and growth starts on your terms, while a dust particle or a scratch on the glass can trigger it accidentally. Controlling supersaturation level is how labs grow large single crystals for X-ray diffraction.

How it shows up in baking
A supersaturated sugar solution is exactly what rock candy is made from: sugar dissolved in hot water far beyond its room-temperature limit, then left for crystals to grow slowly on a string over days. Honey and corn syrup stay as stable supersaturated syrups because conditions prevent nucleation. Both settings require dissolving to the limit, cooling without disturbance, and controlling whether crystals are invited or forbidden.
