Ingredients

  • Rolled oats
  • All-purpose flour
  • Shredded coconut
  • Sugar
  • Golden syrup
  • Butter
  • Baking soda
  • Boiling water

Method

  1. Combine oats, flour, coconut, and sugar in a bowl.

  2. Melt butter with golden syrup.

  3. Stir baking soda into a tablespoon of boiling water and add it to the syrup — it will foam up immediately.

  4. Pour the foaming mixture into the dry ingredients and mix.

  5. Place spaced spoonfuls on a lined tray.

  6. Bake at 175 °C for 12-15 minutes until deep gold; they firm as they cool.
