Ingredients

  • Sponge cake (day old)
  • Powdered sugar
  • Cocoa powder
  • Butter
  • Milk
  • Desiccated coconut

Method

  1. Bake a simple sponge a day ahead and cut into even cubes.

  2. Chill the cubes briefly so they hold together.

  3. Whisk icing sugar, cocoa, butter, and milk into a smooth chocolate icing.

  4. Dip each cube in the icing with two forks, letting excess drip off.

  5. Roll the wet cube immediately in desiccated coconut to coat fully.

  6. Rest on a rack until the coating sets.
