Method
Beat butter until very pale and light.
Sift in cornstarch, flour, and powdered sugar; mix to a soft dough.
Fill a piping bag fitted with a star nozzle.
Pipe identical rounds onto lined trays with consistent pressure.
Bake at 160 °C for 15-18 minutes — they should stay pale.
Cool and sandwich pairs with buttercream or lemon filling.
