Crystallization Control (Polymorphism)
Managing how a substance's molecules pack as it solidifies.
How it works in the lab
Pharmaceutical scientists screen for polymorphs by crystallizing a drug under many conditions, varying solvent, cooling rate, and concentration, because the same molecule can pack into different crystal forms with different solubility and shelf stability. Slow cooling from a clean, dilute solution generally gives fewer, larger, better-ordered crystals than fast crash-cooling, which traps impurities. Seeding a supersaturated solution with a known crystal form forces the batch to grow the desired form rather than an unpredictable one.

How it shows up in baking

Corn syrup is added to interfere with crystal packing, and fudge is deliberately seeded with fine crystals by beating at the right temperature. Both settings show that crystal size and form, not just solid versus liquid, decide the texture.
