Ingredients

  • All-purpose flour
  • Sugar
  • Baking powder
  • Egg
  • Milk
  • Butter (melted)
  • Salt
  • Jam and whipped cream (to serve)

Method

  1. Whisk egg and sugar until pale.

  2. Add milk and melted butter.

  3. Fold in flour, baking powder, and salt to a thick dropping batter.

  4. Heat a lightly buttered griddle over medium heat.

  5. Drop equal spoonfuls of batter, spaced apart; flip when bubbles pop on top.

  6. Cook until golden on both sides and serve warm with jam and cream.
