Density-Based Layering / Liquid–Liquid Separation

Stacking substances by density without mixing them.

How it works in the lab

In a separatory funnel, chemists pour in an aqueous layer and an organic solvent layer, shake to extract a compound from one into the other, then vent and drain the denser bottom layer through the stopcock. The separation works purely because the two liquids are immiscible and have different densities, so gravity does the work of dividing them. Careful technique, like venting often and knowing which layer is which, prevents losing your entire product down the drain.

How it shows up in baking

A layered drink or a trifle works because each layer has a different density and sugar content, and pouring slowly over the back of a spoon keeps them distinct. Oil floating on vinegar in an unstirred dressing shows the same separation in reverse. Both settings teach that liquids arrange themselves by density unless energy or an emulsifier intervenes.
