Oil-Bath Temperature Control

How it works in the lab

Organic chemists heat round-bottom flasks in silicone oil baths set to a specific temperature, because oil reaches temperatures water cannot, conducts heat evenly around the glass, and responds to a thermostat for precise control. Reflux reactions run for hours in oil baths with the bath temperature tuned so the solvent boils gently rather than violently. The bath also protects flammable vapors from any open flame, which is why oil baths replaced burners in modern labs.

How it shows up in baking

Deep frying is an oil bath: the oil holds a steady 175 to 190 °C, cooks doughnuts evenly on all sides, and the fried coating sets quickly when the oil is at temperature. A candy maker cooking sugar syrup is likewise using the liquid itself as the temperature medium. Both rely on a liquid heat-transfer fluid that gives steady, contact-everywhere heat at high temperature.
