Flash Thermal Reaction

A reaction triggered instantly by sudden contact with a very hot medium.

How it works in the lab

Flash pyrolysis and flash vacuum pyrolysis push a reactant through a narrow hot zone for a fraction of a second, then quench it instantly, allowing chemists to catch short-lived intermediates that would be destroyed by slower heating. This lets researchers prove what forms in the first moments of a reaction. The design challenge is that the hot zone must be exactly the right temperature and residence time, since too long or too hot sends the product past the intermediate you wanted.

How it shows up in baking

Dropping batter into 190 °C oil flash-cooks the exterior into a crisp shell in seconds, which is what traps steam and makes a cream puff hollow, and naan slapped onto a clay oven wall puffs instantly from flash heat. Timing is everything, because a few extra seconds overcooks. Both settings use sudden, intense heat to trigger fast chemistry and then stop it at exactly the right moment.
