Sealing a Reaction Vessel
Crimping or closing a container so nothing escapes during heating.
How it works in the lab
Chemists seal vessels deliberately depending on the goal: a reflux condenser lets vapor escape and return while keeping the system closed, a septum-capped vial holds pressure for small-scale heating, and sealed ampules are crimped for reactions that need to build pressure or exclude air. A fully closed vessel heated blindly can explode, so part of the skill is knowing which seal is safe for which conditions. Checking seals before heating is a habit that prevents losing samples and injuring people.

How it shows up in baking
A Dutch oven with its lid traps steam around the bread so the crust stays gelatinized long enough to expand fully, and sealed dumpling or pastry edges hold filling in as steam builds inside. Wrapping food in foil or parchment packets traps steam the same way. Both settings show that a deliberate seal controls what stays in, moisture and pressure, and that a bad seal fails exactly when the process needs it most.
