Encapsulation

Fully enclosing one material inside another before processing.

How it works in the lab

Pharmaceutical scientists microencapsulate drugs inside polymer shells so the active ingredient survives stomach acid and releases slowly in the intestine, controlling both protection and release timing through shell thickness and material. Encapsulation also isolates reactive or volatile materials from their environment until the moment of use. Researchers test release profiles by measuring how much escapes over time, since the whole value of the capsule is in that controlled timing.

How it shows up in baking

A baker wraps cold butter inside dough for croissants, sealing a soft reactive layer inside a stable matrix so it behaves differently during baking than it would on its own, and chocolate-covered fillings or stuffed dates enclose one material in another. Filled buns and pastries keep moisture in the filling until a bite breaks the shell. Both settings use an outer material to protect, isolate, or delay release of what is inside.
