Alternative-Matrix Mixing
Building structure without the standard network (e.g., no gluten).
How it works in the lab
When the standard structural component is unavailable, chemists and engineers substitute an alternative matrix: composite researchers swap resins and find new binders, and formulators replace a removed ingredient with gums, proteins, or starches that mimic its function. The key insight is that structure is a function, not a specific chemical, so the substitute is chosen and tested for the property it must reproduce. Each substitution changes the process conditions too, since new matrices often need different temperatures or mixing.
