Foam Stabilization (Colloid Chemistry)
Whipping air into a liquid and holding it there with a stabilizing agent.
How it works in the lab
Foam scientists study how surfactant molecules stabilize bubbles by lowering surface tension and forming elastic films at each air-water interface, work applied to oil recovery, firefighting foams, and industrial froth flotation. They measure how fast bubbles drain and coalesce, since a foam is thermodynamically unstable and only kinetics and surfactant films keep it alive. Adding a stabilizer changes drainage rates measurably, which is how formulations are compared.

How it shows up in baking
Whipped egg whites hold their bubbles because proteins unfold at the air surface and form a stabilizing film, and sugar added gradually strengthens that film into a glossy meringue. Whipped cream relies on milk fat droplets to stabilize its foam. Both settings show that whipping only creates bubbles while chemistry at the bubble surface decides how long they last.
