Solvent Extraction / Infusion
Steeping a solid in a liquid to pull out soluble compounds.
How it works in the lab
Natural-products chemists extract compounds from plants by choosing a solvent whose polarity matches the target: hexane pulls out nonpolar oils while methanol or water pulls out polar compounds, often in sequence to fractionate the sample. They grind the material, control temperature, and sometimes apply heat or ultrasound to improve yield, then analyze the extract by chromatography. Solvent choice is the single most important decision because like dissolves like, and a wrong solvent wastes the entire sample.

How it shows up in baking
